    Start your day with fall flavors! This Low-Carb Pumpkin Spice Smoothie tastes just like pumpkin pie. As part of my Mediterranean Meal Plan, it includes healthy fats and proteins to start your day with a well-balanced meal.

    Make It Vegan

    To make this recipe vegan, simply use vegan protein powder instead of collagen peptides. Avoid whey or egg white proteins and stick with powders that use plant proteins (i.e. pea, soy, hemp, brown rice, etc.) instead.

    Low-Carb Pumpkin Spice Smoothie

    Equipment

    • 1 Blender

    Ingredients
     

    • 1 cup nut milk
    • ½ cup pumpkin puree
    • 2 scoops collagen peptides (or 1 scoop protein powder)
    • 3 tablespoon ground flax seeds
    • ¼ teaspoon pumpkin pie spice mix (cinnamon, nutmeg, ginger, cloves)
    • ½ teaspoon inulin or Acacia senegal (optional)
    • sweetener of choice (optional)

    Instructions
     

    • Add all ingredients to a blender and blend until smooth. Serve immediately

    Notes

    Nutrition information can vary depending on the type of ingredients you use. Be sure to use unsweetened milk, unsweetened pumpkin, etc.
