Pumpkin Pie for breakfast? 🥧 Heck yeah! This one-bowl, crustless, 2-minute keto pumpkin pie is an easy breakfast that's full of holiday flavor.
Why eat a lonely egg when you can mix it with pumpkin and turn it into a pie? Um... yes please. And if eating pie for breakfast seems weird or "off limits" to you, just think of it as a crustless quiche with pumpkin in it.
So go grab that leftover can of pumpkin puree, an egg, some butter and cream and make yourself a delicious, healthy and low-carb breakfast. Oh, and did I mention that it cooks in the microwave in just 2-3 minutes? Doesn't get easier than that.

What is "Pumpkin Pie Spice"?
"Pumpkin Pie Spice" or "Pumpkin Spice" is a combination of cinnamon, nutmeg, cloves, allspice and ginger. If you live in the U.S., most grocery stores carry this mix in the spices section. If you live outside of the U.S. and cannot find this in your store, simply make your own by mixing the following:
- 2.5 teaspoons of cinnamon
- ½ teaspoon of nutmeg
- ½ teaspoon of ginger
- ¼ teaspoon of cloves
- ¼ teaspoon of allspice
If you don't have all five of these ingredients, don't worry. Just do what you can with what you have. Cinnamon and nutmeg are the most important, in my opinion.
