Ahh, the wonderful flavors of the ocean. This dish is simple, yet aromatic and savory. This Keto Portuguese Seafood Rice is inspired by the Portuguese appetizer Amêijoas à Bulhão Pato.
Inspired by "Amêijoas à Bulhão Pato"
After visiting relatives in Portugal for the holidays, I was reminiscing about the various seafood dishes we had eaten... and was craving more. I kept thinking about one dish in particular that my mother-in-law had made, Amêijoas à Bulhão Pato, which is an appetizer of clams in a white wine sauce. Once we got home, I decided to re-create the traditional flavors of that dish, but turn it into a full meal by adding shrimp, squid, and some keto-friendly riced cauliflower. My husband, being Portuguese, has some pretty high standards for seafood dishes. But it turned out beautifully and we both loved it! I hope you enjoy it as much as we did. 🙂
FYI, the traditional Amêijoas à Bulhão Pato is also keto-friendly. If you're looking for an appetizer, I highly recommend it. Some recipes use coriander and some use cilantro. Many of them use vinho verde, which means "green wine" or "young wine", but any white wine will do.
Not The Same As "Arroz de Marisco"
Note: If you are looking for the traditional Portuguese dish Arroz de Marisco ("seafood rice"), this is not the same thing. That dish is traditionally made with tomato-based sauce, where as this dish has a white wine sauce.
Reducing Carbs Further
Squid does have some carbs. A little less than one carb per ounce, or about 12-14 carbs per pound. I still prefer to use them, since they bring out such a wonderful seafood flavor. However, if you want to reduce the amount of carbs in the dish you could swap the squid for a different meat, like shrimp.
You could also reduce the amount of lemon used. One lemon has about 5g net carbs.
Make sure you use a dry wine, not a sweet wine (Riesling, Moscato, etc. are sweet and have too many carbs).
