    Keto Beef Stew with Noodles

    Warm, cozy, flavorful, keto-friendly... And with NOODLES! This Keto Beef Stew is perfect for a Sunday dinner.

    Seriously, when you're on a low-carb diet, noodles are a treat. Although I typically try to stick to a gluten-free diet, sometimes I "splurge" on a low-carb pasta or bread that contains gluten. It's the little things in life.

    Net Carbs and Macros

    This dish is a bit high on the carb count, especially if you are counting total carbs and not net carbs. However, 10 net carbs per serving is not horrible either. So while this is not something I would eat every day, it is a great once-in-a-while pasta treat that can fit well into a keto or low-carb lifestyle.

    To make it more keto-friendly, serve yourself a half portion and then add a drizzle of olive oil on top.

    The Pasta

    I used Impastable Rotini by ThinSlim Foods for my pasta. The main ingredient is oat fiber, but it also includes wheat fiber, so gluten-free folks would need to find an alternative. There are plenty of other low-carb pasta options that you could use instead, including pasta made from soy, edamame, zucchini, lupini beans, konjac (shirataki/miracle noodles), spaghetti squash and more.

    The "impastable" pasta I used is VERY high on fiber. Therefore, if you are not used to eating a lot of fiber in your diet, you may want to limit the amount of pasta you eat. Maybe use a half bag instead of the whole bag of pasta. Otherwise, that fiber bomb may cause bloating and other digestive issues.

    Cooking the Pasta

    I chose to cook my pasta in the pot instead of cooking them separately. Why? because the stew had a lot of liquid and I wanted the pasta to cook in that flavorful liquid instead of boiling it in plain-old water. I also prefer my stew to be chunky, not soupy, so this was a way to thicken it up. However, this is just a preference and you could do it either way:

    • If you like your stew to have lots of liquid (more of a soup) then cook the noodles separately. Note: the noodles will cook faster in boiling water than they will in the simmering pot.
    • If you like your stew to be thick and chunky, cook the noodles in the pot.

    Keto Beef Stew with Noodles

    Equipment

    • Slow Cooker / Crock Pot

    Ingredients
     

    • 2 lbs beef chunks / stew meat
    • ⅓ cup olive oil
    • 8 oz pearl onions
    • 1 tablespoon minced garlic
    • 1 tablespoon fresh thyme
    • 1 cup water
    • 1 tablespoon worcestershire sauce
    • 2 tablespoon soy sauce
    • 1 teaspoon black pepper
    • 2 teaspoon salt
    • 1 teaspoon psyllium husk powder (optional)
    • 1 carrot (9 in (22 cm))
    • 8 oz bag of Impastable Rotini by ThinSlim Foods (or other low-carb pasta)

    Instructions
     

    • Turn on your crockpot and set to high heat (see notes). Add all ingredients except the carrots and the pasta. You will let the stew cook for a total of five hours, but there are a few steps in between:
    • After an hour, turn the heat down to low.
    • An hour before it's done, roughly chop the carrots and add to the pot.
    • 45 minutes before it's done, add the bag of pasta to the pot and push all of the noodles down so that they are submersed in the liquid. The stew is ready once the noodles are soft.

    Notes

    I like to start with the pot on high heat so that it warms up quicker, then turn it down to low afterwards. However, you could just keep it on low the entire time. If you do this, just add an extra hour to the cook time.
    Instead of adding the noodles to the pot, you could cook them separately and serve the stew on top of the noodles.

      I didn't have the pasta but tried this without it. I threw in a few cherry tomatoes that were aging in the frig and a dash of red pepper. It was really good but, like you warned, a bit soupy as beef stew always is without flour to thicken it. I'll look for the pasta for splurge days.
