    Strict Keto Sardine Salad

    Before my wedding, I ate this Strict Keto Sardine Salad every day for over a month to help me lose weight. If you want to lose weight on keto, put this salad into your meal rotation. Trust me, it works.

    Losing Weight For My Wedding

    I bought my wedding dress in 2019 for my wedding in 2020. Well... you know what happened then. When we finally rescheduled the wedding for June 2022, I hadn't tried on my dress in over two years. Yikes! It barely fit, and I was nervous about popping buttons. So I put myself on the following diet: smoothie for breakfast, this Strict Keto Sardine Salad for lunch, and a detox soup for dinner (low-carb veggies and olive oil). Every day for over a month. And it worked. I lost enough pounds to allow me to comfortably fit into my dress (phew!). I should also mention that I exercised regularly during this time as well, in the form of Power Yoga 3x per week.

    Now, whenever I need to go "strict" and get myself back into shape, this is my go-to meal.

    Only 4 Ingredients and NO COOKING

    Yup, that's right! This is one of the easiest meals ever. I even bought pre-sliced bell peppers. You do need to rinse the miracle rice, but honestly I've skipped this step when I'm feeling particularly lazy and it's fine. The only reason to rinse them is to get rid of the slightly "fishy" smell, but if you're going to top them with a can of sardines... well... then it doesn't really matter.

    Ingredients: Arugula, Miracle Rice, Bell Peppers and a Can of Sardines

    SUGGESTED APPETIZER

    I recommend eating an appetizer of bitters before each main meal. However, since this salad has a lot of arugula (a bitter) I don't really think it's necessary to have an appetizer ahead of time. Just make sure you eat those first few bites slowly. That being said, if you do want to have an appetizer, go for it.

    M.Y. LOW-CARB MEDITERRANEAN MEAL PLAN

    The M.Y. Low-carb Mediterranean Meal Plan is not as strict as keto, but is still fairly low-carb and incorporates healthy fats into each balanced meal. For more information, click here.

    To make this recipe fit the Low-Carb Mediterranean plan:

    • Either double the amount of bell pepper, or add a half-portion of a second veggie.
    • Add a carb item. You an top with corn, quinoa, beans... whatever your heart desires.

    Sardine Salad with a drink and fork

    Strict Keto Sardine Salad

    Ready to go super strict and lose weight fast? With only 4 ingredients and NO COOKING, this salad is both effective and easy.

    Servings: 1

    Ingredients
     

    • 2 cups arugula (2 giant handfuls )
    • ½ cup chopped bell pepper
    • 1 can sardines (4oz can, drained)
    • 2 oz miracle rice (about ⅓ of a 7oz bag)
    • salt and pepper

    Instructions
     

    • Rinse the miracle rice (optional). Drain the Sardines. Chop the bell pepper (or other low-carb veggie).
    • Combine all ingredients in a bowl and serve!

    Notes

    You can use tuna instead of sardines, or any other canned meat in olive oil. If the meat is packed in water instead of oil, add 1 tablespoon of olive oil to the salad. Feel free to drizzle with some apple cider vinegar or lemon juice as well. If you don't like bell pepper, you can swap for any other low-carb veggie, like mushrooms, cucumber or tomato.
